Gluten Free Chocolate Chip Oatmeal Cookies

These are great, you can NOT tell they are gluten free!!
1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. white sugar
1 egg
1/2 tsp. almond extract
1/2 c. + 2 Tbsp. all purpose GF flour
1/2 tsp. xanthan gum
1/2 tsp. salt
1/4 tsp. baking soda
1 1/2 c. GF rolled oats
3/4 c. chocolate chips
In a hand mixer, mix butter and sugar until just combined. Add egg and almond extract and mix again. Separately, mix flour,  xanthan gum, salt and baking soda. Then mix the wet and dry ingredients together until just combined. Stir in oats and chocolate chips. Chill dough in freezer while oven preheats to 350 degrees. Spoon dough onto cookie sheet (should make approximately 1.5 dozen cookies) and bake for 12  - 15 minutes. 
Pies: are my gf pie crust and filled with cookie dough from above. Really fun and something different for lunch boxes or a tea party.

  2. I made them with both semi sweet and milk chocolate chips this last weekend. They were a bit dryer but still good. I also did not have quite the 1/2 cup butter so it was about 6 tbsp of butter which could have made it a bit dryer also. Nicholas did not notice.

  3. I also made them tonight with raisins, and cinnamon chips and cut the sugar by half of each and they are great!

  4. Ground the oat flour 3/4 and used same recipe and am going to put in to mini pies! We will see?? I did add 1 tsp more gf flour after mixin all, it felt a tad soft. Was perfect! I used mini choc chips too so when you get the pie crust and cookie, it is all the same texture.
